Bacon, Egg & Cheese Quesadillas Recipe (1)

Let me bring you back to my Sunday morning this past weekend. The picture goes something like this. I’m in the kitchen (surprise!) and the hubby is lounging on the couch. As I’m making bacon egg muffins he asks with a sheepish grin, “Do you think you could make me a breakfast quesadillas also?” Sure, anything else I can do for you sir?

Quesadillas – Hubby is obsessed! We received a quesadilla maker for our wedding and he has not stopped making them since. I love it because when I have no other ideas for food I quick grab that and know he’s going to be happy with whatever I put in there. It’s basically a Sunday ritual to make quesadillas with whatever ingredient we have sitting around. I really want to try Artichoke and Spinach Dip quesadillas like you find at a restaurant next!
Bacon, Egg & Cheese Quesadillas Recipe (2)Ah it’s all good. I love him dearly and I’ve only had a few days a week to treat him to home cooked meals so I better do it when I can. He’ll be back after this week and things might change a little!

This isn’t even hard enough to justify a recipe and sometime I think are people going to thing I’m pointing out the obvious? But these were so good and in case you wanted a recipe I thought I’d post one. They are super simple and quite tasty. It’s a different twist on the plain old bacon and eggs. We have a handy quesadilla maker but you can make these in a frying pan also so don’t let that stop you.

This looks delicious and what a great way to use up extra tortillos.
What is the easiest way to flip the tortillos once the egg mixture is added? I usually end up with egg outside of the tortillo’s and in the skillet.
    Thank

  4. Corn kernels (fresh or frozen!)
  5. Sliced jalapeño peppers.

What kind of cheese to use for quesadillas? ›

Sometimes the best cheese for quesadillas is whatever you have in the fridge when the craving strikes. Cheddar and Monterey Jack are standards of American-style quesadillas. But if you are planning ahead, consider that freshly grated cheese such as cheddar or Monterey Jack makes the meltiest quesadillas.

Is one quesadilla enough? ›

When creating a healthy balanced quesadilla make sure to take into account the size and type of tortilla. One white-flour quesadilla may be enough for a meal, while you may need 2-3 corn quesadillas to feel full.

How to spice up a cheese quesadilla? ›

Try adding cooked chicken, beef, or veggies for added flavor and nutrition. Black beans, corn, and fresh herbs also make great additions. What block cheese is best for quesadillas? If you prefer to grate your own cheese, choose a block of Monterey Jack, cheddar, or Colby Jack.

Should I use butter for quesadilla? ›

Coating the Pan with Butter

— is to use only a little bit of butter or oil in the pan when cooking the quesadillas. Too much and I find the tortilla ends up soggy and greasy instead of crispy. Just a half teaspoon or so to coat the bottom of the pan ensures a crispy tortilla with golden-brown spots.

Should you make quesadilla with butter or oil? ›

Unless you're using a non-stick pan, the extra lubrication from the oil will make it easier to flip your quesadilla and remove it from the pan or press when it's done. Most recipes, in fact, call for adding butter or oil to a frying pan and then adding either a tortilla or a pre-assembled quesadilla.

What is the best melting Mexican cheese for quesadillas? ›

What cheese do taco trucks use for quesadillas? ›

How to seal the edges of a quesadilla? ›

Once it's hot, lay in a tortilla and sprinkle with two tablespoons of the cheese mix, making sure you leave a decent border all around the edge. When the cheese begins to melt, add a few slices of chilli and a pinch of epazote (or oregano), and fold over the tortilla, pressing it down to help seal it.

How to keep quesadillas from falling apart? ›

Spread ¼ cup (25 grams) of cheese over the tortilla.

You will be adding the rest of the cheese later; the two layers of cheese will help "glue" the quesadilla together.

What spices should I put in my quesadilla? ›

Quesadilla Spice Mix:

1 tsp each onion powder, dried oregano, salt. 2 tsp each cumin powder, paprika. 1/4 tsp each black pepper, cayenne pepper (optional)

Here are a few of my favorite filling combinations:
  1. Spinach, mushroom, and caramelized onion with goat cheese.
  2. Black beans and roasted poblano peppers with Monterey Jack.
  3. Roasted sweet potato, cauliflower, and kale with cheddar.
  4. Crumbled chorizo, beans, pickled jalapeños.
